Yesterday we went to the Farmer's Market, so that helped dictate what we are having this week.
Monday--cheeseburger beef Wellington's with tomatoes from Farmer's Market(I think this is their 3rd week on the menu, but we ARE having them today!), tater tots, mixed veggies
Tuesday--chicken pot pie (didn't have this last week)
Wednesday--beef broccoli stir fry, Jasmine rice, egg rolls
Thursday--Italian chicken, cheese-filled shells, steamed zucchini and yellow squash (from Farmer's Market)
Friday--homemade chili rellenos (with peppers from the Farmer's Market), rice, beans

What an amazing time you must have had watching the fireworks on the mall. I have always wanted to see them back east where people really celebrate the 4th. Out here they celebrate, but it really isn't the same. Each city has a small fireworks show, and Tempe and Phoenix have large ones where 45,000 people show up, but it was also 116 degrees on the fourth this year. We didn't do much planning and the fireworks show that is usually held about a mile from our neighborhood was moved this year so we drove down to see another one and ended up sitting in the car with the A/C on and listening to the fireworks music on the radio. It wasn't bad, but it sounds like you had a fabulous time.
