Meals...Using What We Have

I'm just going to list some meals not sure what order we'll have stuff in yet. This is using the stuff in our freezer and I will still add in some things that we just really enjoy (like the kale salad). This is using up pretty much everything in the freezer except for the 16 pounds of boneless/skinless chicken breasts....I'm only using those in three meals in this plan. There may be a few things left that there is enough for more than one meal, but I figured I'd make all this and then take inventory and start again. It will be pretty empty after this, though!

I'll just keep this list for us to choose our meals from and add to for the week if there is something we're really wanting. I just wanted to plan out what we have to use it all up.
--steak gorgonzola frozen meal, dinner rolls
--kale salad
--French bread pizza (Italian sausage from freezer, sweet peppers, onion, pepperoni, mozzarella cheese
--spaghetti (from leftover sausage and sauce from pizza), green beans, carrots
--breakfast burritos
--fish sticks, pasta roni, green beans
--chicken noodle casserole, steamed broccoli
--sweet and spicy wings, fire roasted veggies, potato wedges, onion rings, seasoned fries (using up the little bits of stuff that isn't enough for one meal alone....LOL!)
--butternut squash pasta
--baked chicken (using a Kraft kit in the fridge), black eyed peas, carrots
--chicken fried tuna steak with jalapeno cream gravy, rice medley (frozen side dish from Trader Joes), fire roasted veggies, broccoli
--smokey bbq chicken, beans (using ham hock in freezer), corn bread, corn on the cob
--pasta with meatballs, salad
--chicken caesar salad
--turkey/dressing casserole (using turkey, corn bread cubes and bread cubes in freezer-->making homemade dressing and omitting cranberry sauce), green beans--->the turkey was bad, so we didn't have this meal
--stroganoff pasta with meatless meatballs
--lemon chicken, pasta roni, steamed veggies
--fajitas (using steaks in freezer)
--stir fry (meatless chicken tenders, sugar snap peas, stir fry veggies), brown rice, wontons
--buffalo chicken meatballs, mac and cheese, broccoli
--patty melts (using h.b. patties in freezer), chips, fruit
--tilapia parmesan, sauteed veggies

ETA:  Looking back at my blog, I noticed that sometimes I would give a review of a new recipe that I tried (usually it was on Menu Plan Monday).  I really liked that looking back, I had an idea of if we cared for the meal.  :)  So, I decided to try to update when we try a new recipe!

The chicken noodle casserole was very good!  We made it with Reames frozen egg noodles.  They didn't taste very good plain, but were really good in the casserole.

The buffalo meatballs were good!  I put celery in them as well as the onion and skipped out on serving them with any dressing, just the buffalo sauce.  I put a little of the hot sauce into the meatball mix, too, and put them under the broiler to brown them up a bit.

Meals...

I'm trying to get back into the swing of things.  Our freezers are packed, so I just need to make a plan!  Lucas does not eat these meals for the most part, but Logan does.  I do try to get Lucas to try what we are eating, but I have enough battles with him that I choose not to battle over meals.  :)

Monday-- falafel on chapati bread with hummus, tzatziki, lettuce, tomatoes

Tuesday--Hungarian cabbage and noodles with hamburger meat (I have cabbage and decided to try this recipe out), green beans

Wednesday--teriyaki chicken, egg rolls, stir fry veggies, rice

Thursday--breakfast burritos, fruit

Friday--roasted potatoes, browned hamburger meat with pork and beans, green beans.  I know this sounds like an odd combination, but you mix the cooked meat and beans and serve it over the potatoes.  I heard about it and tried it and I really liked it.  It has been a long time since we've had it, though.

On the weekends we typically eat up leftovers or have sandwiches.  This weekend will be a bit different because the boys don't have soccer since it is a holiday weekend.  We really don't have any plans either.

Next week:  baked chicken (using one of those new things from Kraft where you dampen the chicken then dip in bread crumbs and cheese....I had a coupon to get it for free), fire roasted veggies (from freezer section at Costco....it has potatoes in it, too)-------->  I originally had this planned for Friday, but then remembered that I had potatoes in the pantry that needed to be used.

Menu Plan Monday....

We are watching our cholesterol intake around here, so I've been on the search for some tasty food for us. I've not been doing so great on menu planning and I'm trying to get back on track. It isn't just menu planning, but household schedules in general. At one point, I was so great about having a cleaning schedule and menu planning and I long to get that back. My household really did run so much smoother then. It isn't that my house is a pig pen because I haven't been great about a schedule, though. The thing was that I had things that I did each day and now I just do it all at once. Breaking it into smaller sections was so much easier, though.

Anyhow, on with the plan for this week! :-)

Monday-- pasta with "alfredo" sauce, salad

Tuesday--veggie burgers and fries

Wednesday--veggie stir fry with Chinese noodles

Thursday--artichoke tomato pasta, veggie meatballs, green beans

Friday--baked tilapia, coconut lime rice, steamed veggies with basting oil

Menu Plan Monday...

* = new recipe
Monday--enchiladas, rice, and beans (using homemade corn tortillas)--->I made this over the weekend (pictured below), but have more tortillas and we all enjoyed it!

Tuesday--PW's shrimp pasta, homemade wheat bread, salad

Wednesday--beef roast, baked sweet potatoes, field peas with snaps, salad

Thursday--Trader Joe's lemon pepper pasta with lemon cream sauce*, lemon pepper chicken, and steamed Normandy veggies (never had this a couple weeks ago)

Friday--tuna steaks*, Harvest Grains Blend* (from Trader Joe's...cooked according to directions--->it has Israeli style couscous, orzo, baby garbanzo beans, and red quinoa), green beans

Sunday, May 23, 2010

Menu Plan Monday...

Looks like I have a Trader Joe's theme this week! :-)

Monday--Lemon garlic tilapia, rice pilaf with pine nuts, steamed veggies

Tuesday--Penne a la Vodka and green beans--->taking a short cut here and using Trader Joe's Organic Vodka sauce...it is very good!

Wednesday--breakfast for dinner--->sausage gravy, scrambled eggs, homemade biscuits

Thursday--Trader Joe's lemon pepper pasta with lemon cream sauce, lemon pepper chicken, and steamed Normandy veggies

Friday--chicken curry over Jasmine rice--->I use Trader Joe's Curry Simmer Sauce, but add chopped tomatoes, onion, and bell pepper

Menu Plan Monday

I have been absolutely horrible about cooking lately. It is time that I get back to it. We are trying to limit our meat intake (and fat/cholesterol), so will be having lots of salads. They are just easier for me to do.

Sunday--fish tacos--these were super easy and pretty tasty! I just used Gorton's tilapia fish sticks, wheat/corn tortillas, shredded lettuce and mayo/sour cream/salsa as the sauce (1/2 cup of each....next time I would add a few dashes of Cholula to add more spice)

Monday--pan seared red snapper, rice pilaf with pine nuts, and steamed Normandy veggies

Tuesday--quinoa taco salad--We love this! I omit the cilantro and we just top ours with salsa, no cheese. I like mine on the spinach best, but hubby likes his on a salad blend. When I didn't have black beans, we had it with black eyed peas and that was really yummy, too! This makes a lot, so we eat 2 meals off of it.

Wednesday--Black Bean-Taco Salad with Lime Vinaigrette

Thursday--leftover quinoa salad

Friday--not sure if we will be home. Some friends are moving from Italy to Hawaii and stopping over in Baltimore. If they make it out of Italy (due to flight delays from the volcanic ash), then we will be heading to Baltimore for the weekend!

It's been so long since I've done a Menu Plan Monday, but I'm sure, like always, there are plenty more menus to check out at Laura's blog!

Menu Plan Monday....

We tried two new recipes last week, pan seared red snapper and rice pilaf with pine nuts. They went very well together. The sauce on the fish was very strong (it was still very good, I just needed a bite of rice with it and it was perfect). If we have it again, I would probably cut down on the vinegar a bit. The rice was really, really good. Logan isn't a big rice fan, but loved it as long as I took the pine nuts out (he doesn't like nuts or seeds).

I went to watch a friend's daughter play softball one night last week and didn't cook the meal planned. We all just ate various things that we had at home, so one meal is carried over to this week.

I typically bake banana nut bread each week. Last week I bought a bag of ripe bananas and made 4 loaves. I need to wrap some and get them in the freezer. I still have bananas to use so I will likely make more banana nut bread and put it in the freezer.

On to this week (which happens to include lots of green beans.....our favorite veggie!).....

*=new recipe

Monday-- My husband's birthday, so I am making a favorite (got the recipe from my MIL)!! -- Italian cheese balls, green bean casserole, mashed potatoes, berry pie (he doesn't like cake all that much)

Thursday-- steak* burritos (just using the recipe for the meat)

Friday--chicken strips, mashed potatoes, Syrian green beans (We love these!! I omit the cilantro.)

Saturday-- jambalaya*

Sunday-- Asian tuna patties*, sesame noodles, steamed broccoli

I'm going to attempt homemade granola bars this week, too.

Menu Plan Monday...

Last week we didn't get to a couple of meals because we ended up having friends over for pizza on Thursday. Then we had pizza and other leftovers on Saturday, and Sunday. So, I am carrying over some meals to this week. I have been baking a batch of banana bread every week because my husband loves to take it to work with peanut butter on it for a snack.

The pulled pork sandwiches were very good! I used ribs for mine. I cooked 4 pounds of bone in ribs in ths crockpot with just water, salt, pepper, and garlic on high for 4 hours. They were falling off the bone, so I figured that was a good sign. I don't make ribs very often and was concerned that 4 hours on high might not lead to very tender ribs. It worked, though. I shredded the meat and disposed of all the liquid and bones. The first night we had them, I did not toast the buns, but I had one for lunch on Saturday and toasted the bun (a bit of butter spread on then heated in a cast iron skillet---YUM). It was way better with the toasted bun! I really loved this recipe, but my husband is not a big fan of pork, so I likely won't get to have it again any time soon.

On to this week.....

*=new recipe

Monday--baked chicken breast, baked sweet potatoes, and green beans

Tuesday-- pan seared red snapper*, rice pilaf with pine nuts*, and carrots

Thursday-- cheeseburger crescent rolls (recipe below), baked sweet potato fries, salad

Friday-- chicken strips, mashed potatoes, Syrian green beans

Saturday-- bean soup with kielbasa, roasted potatoes, corn bread

Sunday--leftovers

Breakfast choices:
--eggs, sausage, toast with jam
--cold cereal

--sandwiches, carrots and dip, fruit

--grilled cheese and tomato soup

Snacks:
--hummus and pita chips
--fresh fruit or dried fruit
--nuts
--banana nut bread with or without peanut butter
--graham crackers and applesauce
--graham crackers, almond butter, choc. covered raisins

Treats:
--Jiffy Cake cookie bars (recipe on the box....so easy and so good...I baked these up on Sunday.)
--rice crispy treats with choc. and peanut butter chips (I didn't make these until the weekend, so we still have them)
--ice cream

Cheeseburger Crescent rolls:

Last week I was making the bacon cheeseburger wellingtons and decided to try something different (with a little inspiration from my sister). Instead of making a patty and wrapping it in 4 crescent rolls, I just scrambled the hamburger meat with the seasonings. I used 2 triangles of dough to make a rectangle and put the cooled meat onto the dough. I topped it with cheese and mustard, folded the dough over and sealed the edges (I was out of bacon, so I omitted it, but if I had it I would have chopped it into little pieces and included it). It made great little pocket sandwiches and these were a much better size for us (the patty and 4 crescent rolls were HUGE). I did a pound of meat and one can of crescent rolls and that left me with leftover meat for this week!

Menu Plan Monday...

Last week we tried five new recipes and we liked them all. The falafel will certainly be something we have often....we LOVED it! Matter of fact, I'm planning it into this week! The recipe says to use a blender on the onion and parsley, but my blender isn't that great and wasn't chopping it up. I switched it into my mini chopper and it worked great. I had planned on baking them, but ran short on time and fried them to save time. The recipe says to make 8 balls, but I had trouble with them falling apart when they were that large. I made some smaller ones and it worked out great.

The sesame noodles were very tasty! Even my 7 year old ate them up!

The fideo was very yummy, but I had to make a few adjustments. I didn't read at the top that you can "use less water for a drier pasta" until it was too late. It was more like a soup, so I drained most of the liquid off and added in a can of tomato paste. It stated above the recipe that you could add tomato sauce, but it was already so liquidy, so I thought the paste would be perfect and I was right!

We also tried the pumpkin pie oatmeal. I don't have individual-sized ramekins, so I just used an oval Cornigware dish and it worked out. My 3.5 year old loves oatmeal and my 7 year old tolerates it, so I thought it was something we could all eat. My boys did eat it, but neither of them really loved it. My husband and I thought it was rather tasty, though!

I also made the strawberry bread. YUM! I just finished it up late Sunday night, so the boys haven't tried it. I think they will love it!

We have had the butternut squash/sausage pasta lots of times, but last week we tried it with sweet potato instead. It was very good!

On to this week.....

*=new recipe

Monday--falafel sandwiches on chapati bread (I have chapati flour. All I have to do is add flour, knead, wait 10 minutes then roll them out and heat them on a hot cast iron skillet. YUM!)

Tuesday-- Bacon Cheeseburger Wellingtons and baked sweet potato fries

Wednesday--chipotle lime turkey breast burritos

Thursday-- pulled pork sandwiches* and baked beans

Friday-- oven baked chicken breast, baked sweet potatoes, and green beans

Saturday-- pan seared red snapper*, rice pilaf with pine nuts*, and carrots

Sunday--honey balsamic chicken, homemade spaetzle, steamed broccoli

Breakfast choices:
--eggs, sausage, toast with jam
--cold cereal
--cereal bar, yogurt, cup of fruit
--oatmeal
--strawberry bread with or without peanut butter
--banana nut bread with or without peanut butter

Lunch choices (never anything exciting):
--hot dogs, chips and fruit
--sandwiches, carrots and dip, fruit

Menu Plan Monday...

Last week we tried a couple of new, tasty recipes. The fish was great! Logan even asked for seconds! I've roasted potatoes lots of times, but this time I took Ree's suggestion and added balsamic vinegar. It was very good and went perfectly with the fish.

The macaroni and tomatoes was really good, too! I think next time I would cut back on the butter a bit, though.

On to this week.....

Tuesday--pan fried fish*, glazed carrots, roasted potato wedges

Wednesday--honey mustard chicken, macaroni and tomatoes*, green beans

While looking at recipes to plan for this week I found something that I want to try next week, so I thought I would post it here (I don't want to forget).

Menu Plan Monday...

I am so excited to have my kitchen back! I made do in the basement cooking in a microwave, crockpot, and electric skillet for a few months. Then we got one wall of cabinets and counter tops installed that had the sink, dishwasher, and stove. I made due with using that in my unfinished kitchen for a few months. Now, I am so happy to be cooking in my mostly finished kitchen!! Not only was a I making do without my kitchen, I didn't get my kitchen supplies unpacked until recently, so I was severely limited in what I could cook. Now that everything is unpacked I am so happy and it is time to get back to menu planning!

*=new recipe

Monday--pasta (I'm using basil chicken patties from Costco and adding 1/2 cup chicken broth), garlic bread, salad

Tuesday--lemon butter chicken, lemon pasta*, honey mustard acorn squash (Maybe??)----> We are going into DC for the Christmas Carol Train Tour and not sure when we'll be home.

Wednesday--roast (this recipe calls for steak, but I'm using a roast) with potatoes and carrots

Saturday and Sunday--leftovers

MPM--minus the kitchen, week 2.

This week we are still working on the kitchen. The new wiring is in, the plumbing is repaired, and all the drywall is up. This week we will be taping, mudding, sanding, priming, painting....you get the idea!

In other words, it is another week (at least) of figuring out what to eat when there is no kitchen to cook in. Considering my husband is only one month in on his new job since being laid off for 3.5 months, eating out every night isn't an option.

Monday--BLTs on croissants, apples, chips

Tuesday--burritos

Wednesday--beef stroganoff, peas, carrots

Thursday--pork roast (scroll down in that post for the recipe), mashed potatoes, salad, green beans (didn't get to this last week)

Friday--?? not sure yet, maybe leftovers

Menu Plan Monday--minus the kitchen!

This week we started the work in our kitchen. In preparation for that, I did a lot of cooking on Saturday. I made a potato casserole with ham, I cooked 6 pounds of chicken breasts and made poppy seed chicken and chicken salad for sandwiches with it, and browned 6 pounds of hamburger meat.

I'll get some before shots and progress shots up ASAP, but here is one to show I really do mean "minus the kitchen" (notice my fridge for proof it is my kitchen).

Sunday--potato casserole, corn, green beans, rolls

Monday--poppy seed chicken, rice, carrots, salad

Tuesday--potato casserole, black eyed peas, green beans

Wednesday--beef dish of some sort in the crockpot

Thursday--pork roast (scroll down in that post for the recipe), mashed potatoes, carrots, green beans

Menu Plan Monday...

Last week was crazy, but next week might be worse (as far as having a kitchen to cook in goes). This week, I'll try to follow a plan.

A couple of weeks ago, we tried Tammy's tomato onion pizza. I didn't get a picture of it, but it was sooooo yummy! I wasn't sure Logan would like it (due to the onions), but he gobbled it up. I used the cheese I had on hand (Mexican blend) and it was great!! (scroll down for recipe)

* = new recipe

Sunday--hot dogs, chips, apple slices

Monday--Breakfast for dinner: homemade gravy and biscuits, eggs, sausage

Tuesday--pasta, green beans with garlic Parmesan butter

Wednesday--lemon butter chicken, lemon rice (I just throw it together, but it is similar to this), simple peas (minus the onion this time since I'm trying to skip a trip to the store this week), and carrots

Thursday--cajun style snapper*, hoppin john rice, corn

Friday--Salisbury steak, Jasmine rice (instead of mashed potatoes because hubby bought a 25 pound bag at Costco!!), carrots

Menu Plan Monday...

Last week we didn't get to two meals, so those are carried over to this week.

I didn't take a picture, but the bourbon chicken that we tried was very good! I don't think it tasted like what I get at the mall, but tasty none the less.

The olive cheese bread was pretty good. I think it had a bit too many olives for my taste, but I'm not a big fan of olives. My husband loves olives, so he loved the bread.

* = new recipe

Monday--BBQ chicken, chipotle lime corn* (just add Wegman's chipotle lime finishing butter to corn), lemon rice (I just throw it together, but it is similar to this)

Tuesday--salad drizzled with olive oil and lemon juice, tomato onion pizza*

Wednesday--chili cheese dogs (This kit is pretty good and fast!! I add kidney beans and diced tomatoes.), salad

Thursday--Parmesan chicken with salad*

Friday--not sure yet

Menu Plan Monday...

Last week didn't go as planned at all. The sickness that Lucas had the week before was passed on to Logan and my husband. Needless to say, we didn't eat the planned meals, but kept it pretty bland with things we had on hand. So far I've managed to escape getting sick and I'm hoping it stays that way. This week is almost exactly the same as last week.

Monday--
pretzel dogs, salad (It has been a long time since we've had these. It was a meal that everyone loved and I decided it was time to make it again! I'll also wrap some string cheese up----YUM!)

Tuesday--eating out--have a couple of coupons that expire and we've been promising Logan we'd take him

Wednesday--enchiladas, rice, beans (We love these enchiladas and rice!!)

Thursday--breakfast for dinner--pancakes, eggs, sausage

Friday--roast sticky chicken legs (have some legs to use up), rice, Syrian green beans

Saturday--Valentine's Day--
penne a la vodka, homemade French bread, salad, and chocolate sheet cake (my family has been making this for years and I LOVE it!!)
