MMMM, falafel....

We really love this homemade falafel thing. I made it for dinner on Monday (and last Monday, too...LOL!!) and I doubled the recipe and froze part of it to see how it turns out reheated. It only took a little more time and effort, so I hope it pays off.

We found some frozen falafel that we really loved and the grocery store stopped selling it. Then I tried a couple of boxed varieties that you just add water to. They weren't that great, so I decided to go for homemade. I turned to Allrecipes, and it didn't disappoint! I'm pretty bad about following a recipe, but not really following a recipe. It drives my husband batty because he fears I won't be able to duplicate it the next time around. I guess he thought it turned out, because he loved the falafel just as much the second time around!

Follow the link to the recipe I used. I don't make the yogurt, since the Costco variety tastes yummy!

Here are my eggs (remember, I doubled the recipe) with the cumin, (I omit the coriander) salt, pepper, cayenne pepper, lemon juice, and baking powder.

Here is the smashed chickpeas and olive oil with the onion, parsley, and garlic mixture. The recipe says to use a blender on the onion, parsley, and garlic, but my blender didn't do the trick. I tried my mini chopster (I don't have a full size food processor) instead and it worked great!

A close up of the onion, parsley, and garlic. I really let it go until it is super fine. No big chunks of onion in my falafel!

Chickpeas and onion mixture combined before adding bread crumbs. The chickpeas should probably be smashed up more, but I was in a hurry. It still tastes great, though!

A shot of the consistency after adding the bread crumbs. I didn't add enough the first time around and they fell apart while cooking.

Say hello to my little friends!! The recipe says to make 8 balls and then flatten them into patties. I personally like mine smaller since I make them into sandwiches. They also cook faster and are less likely to fall apart! I used a cookie scoop and I got 39 falafel balls.

Time to eat! We serve our falafel on Chapati bread. I buy the flour and just have to add water, knead, let sit 10 minutes, then roll it out and heat it in a hot cast iron skillet. We add hummus, tzatziki (from Costco), a squeeze of lemon juice, lettuce, tomato, and salt and pepper to taste! Yummy!!

It truly amazes me that Logan ate the whole thing up before I had even started eating mine!

Below is the slightly modified recipe.

Ingredients:

  • 1 (15 ounce) can chickpeas (garbanzo beans), drained
  • 1 small onion, chopped (I didn't measure, but I would guess I used about 1/4 cup...this is measured BEFORE putting it in the chopper.)
  • 1/2 cup fresh parsley
  • 2 cloves garlic, chopped
  • 1 egg
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 dash pepper
  • 1 pinch cayenne pepper
  • 1 teaspoon lemon juice
  • 1 teaspoon baking powder
  • 1 tablespoon olive oil
  • 1 cup dry bread crumbs (Be sure to add these slowly. You don't want too much. I probably used about 3/4 cup)
  • oil for frying

Directions:
    1. In a large bowl mash chickpeas until thick and pasty; don't use a blender, as the consistency will be too thin. In a blender (a food processor would be great...I don't have one, so used my mini chopster), process onion, parsley and garlic until smooth. Stir into mashed chickpeas.
    2. In a small bowl combine egg, cumin, salt, pepper, cayenne, lemon juice and baking powder. Stir into chickpea mixture along with olive oil. Slowly add bread crumbs until mixture is not sticky but will hold together; add more or less bread crumbs, as needed. Form 8 balls and then flatten into patties (I like mine smaller, so I would do more like 16 balls).
    3. Heat 1 inch of oil in a large skillet over medium-high heat. Fry patties in hot oil until brown on both sides.

Enjoy!!

Finally. Yes, finally....

Our kitchen is finally mostly finished! I am so happy about it, that I can't even wait to show you pictures! Painting the cabinets was very, very time consuming. Each piece needed 3 coats of primer and a coat of paint. For the doors, we could only paint one side at a time so the 17 doors took F.O.R.E.V.E.R.!

There are 5 drawers that still need to be painted. Our walls and trim were off white, and we painted the ceiling and cabinets white, so we now need to paint the window trim and pantry door trim white so they will match. We also still need to install baseboards.
Soon, we will install new lights in there and continue the new flooring into the pantry.

I am very pleased with how it turned out. Remember, this isn't my dream kitchen. We did this on a major el cheapo budget (no high end products afforded here), but I am pleased with the results. Matter of fact, this was not EVEN in our plans (considering it happened just as my husband found a new job after being without one for 3.5 months!!), but when a leak happened and half the kitchen had to be torn out anyway we figured we might as well tear the rest out as well. Our homeowner's ins. gave us some money and we used that along with some of our own to do the remodel. I'll have to add up the cost of it, but I think we did really well. We had to buy several tools, but I won't add those in because now we have them and can use them elsewhere in the house. I think that we did what was right for the house. The housing market in this area has completely bottomed out. Since we bought right before this happened, we owe more than it is worth. Spending a lot of money in the kitchen wasn't an option, but the update is much appreciated by me!!

In case you don't recall, this kitchen was ripped down to the studs and built back up. We put in new wiring, new plumbing, tore down a non-load bearing wall, and built it all back up again! Aside from a little help from my dad and step-mom in the demo, plumbing, and wiring, I am so excited to say we did this ourselves! Considering neither of us have any experience in this type of thing, I'd say we did a pretty good job. My poor husband apologized on more than one occasion, saying this just wasn't his type of work....he is more the computer geek type! I'm proud of him. It wasn't easy, but he did the bulk of the work himself.

We took some pretty large breaks because doing this type of work isn't easy to begin with, but when you have no clue what you are doing, it is even harder. Not to mention stressful!

I'm sure you can remember what our kitchen looked like. Stuck in the 70s and never felt clean. The avocado green sink and faux brick painted bright red added just the right touch of Christmas cheer....LOL! I know the picture isn't great, but can you believe that it looks better than it did in real life. Trust me on this one!

And now, what I'm sure you really wanted to see anyway......

Before:

Here is Logan knocking the first hole in the wall. It also gives a close up look of the nastiness of the wall! I hated that brick!!

Here is what it looked like after the end of demo.

Drum roll please!! Here is what it looks like now......

And now for a side by side comparison:

As a side note: The cow cookie jar on top of the fridge was hubby's grandmother's and the teapots above the sink were my grandmother's.

Did you make it all the way to the end? Now I need some input from all of you. See how one wall is off white and the other is blue? We are trying to decide if we want the off white wall painted white or blue? I kind of like the two different colors together, but I also really love the blue color. What do you think?

Finally!!

I decided to enter this in Tackle it Tuesday for Jan. 27th because it is my most recent project and I'm pretty proud of it. Plus, after getting to this point, I want a break from projects for a while....LOL!

This week we finally finished up something we started more than 3 months ago. The day before my husband found out he was being laid off, we started some work in our house and there was no turning back. Perfect timing, right? We had signed a contract to have a new drain system and sump pump installed in the basement and also a new window well and basement window. To save a little money, we tore out the old paneling and wall frame ourselves. Oh....and a MASSIVE brick wet bar. Man, that was HARD work. Once it was out, we had to carry out all the rubble and since we only have a minivan, we just dumped it into the back yard until we could deal with it. Later we rented a U-haul truck and loaded it all into it and took it the dump. Um, don't tell U-haul that we used their truck for more than moving furniture....LOL! They asked me that when I called...I certainly didn't want to tell them, "No, we plan on loading a crap ton of junk in the back and taking it to the dump". We were careful and lined the back of the truck with a tarp and they never knew what we had done...LOL!

To save even more money, we decided to put it all back together once the hired out work was done. Now, we are not professionals, so it is not perfect, but I think we'll be able to tape and mud it just fine. Oh, one more thing. Our house is approaching 40 years old and nothing is square in here. That means that a square piece of drywall is not guaranteed to fit in the corner without some adjustments. First, we had to put new Dry-Loc paint on the wall. Then hubby built a new wall frame with a vapor barrier attached to it(I don't know if that is what it is called or not), then we installed new electric for 8 outlets, one switch and 4 wall sconces. Once that was done, we put up insulation (something that was completely lacking before!!) and then it was time to hang drywall. We bought ourselves a T-square to help with making the cuts needed for the outlets. Sounds pretty straight forward, but remember, nothing is square in our house! Then, add to that we found out after making all cuts except on our final piece of drywall that our T-square wasn't square after all. No wonder our cuts were off e.v.e.r.y s.i.n.g.l.e time! Luckily, we were able to just buy the large outlet covers to hide the larger holes :). Anyway, this was no easy task and we aren't done, but we've made MAJOR progress! Once we get some money flowing back into the house, we'll tape, mud, sand and paint, then get a new floor in there!

You can see the sump pump in the floor under the ladder. You can also see a pattern on the floor by the wagon where the bar used to be. Also, we presently use it for our freezer, storage, and our setup for wireless throughout the house. Eventually we will clear it of the junky furniture!

I didn't take before pictures really because the room was so dark and dungeon like. I hated it! However, I wanted to make sure we had proof of just how big and hideous that wet bar really was!

Before:
The reason we got our sump pump. We didn't know the full extent of the damage until we got the paneling down. The sump pump is now in this corner.
The dinky window and rusted out aluminum window well....and weeds..LOL! Oh, and dryer lint since our dryer was vented through there, too.
Speaks for itself!

Tackle it Tuesday/Wordless Wednesday--Lucas turns 2!!

Tackle It Tuesday Meme

(I decided to use these as my Wordless Wednesday entry as well.)

I have been working on making a video for my little one. He is 2 years old today!! I can hardly believe it!! Turns out, I've got so many favorite photos, I'll be making two videos. I really had hoped to have them both completed already, but I was gone all day on Monday. So, here is the first one and I hope to post the other one later today!!

Yum, yum, yum, yum.......

Tackle It Tuesday Meme

"Yum, yum, yum, yum". That is what Logan says that the shredder sounds like. You know, I think he is right. A bit like Cookie Monster!! Anyway, I finished up some shredding that I've been working on for a few days. I was really trying to get it all done so I could put it out with the recycling on Monday night. I'm happy to report that I made it!! Now, this was ONLY what needed to be shredded in my computer desk (my basket in there was over-flowing). I didn't get a before shot, but I'm sure you can imagine my pile based on the picture below!!I really hope to keep up with it this time!! Now to work on the bag that is in the basement.

Now I need to go here and opt-out so that I'll stop getting all those credit card offers. I had no idea buying a house would make me get so many more offers!!

Next up on my to-do list--planning my menu. I typically have it up with MPM (Menu Plan Monday), but I got food poisoning and am just now feeling a bit better. I didn't even want to think about food!!

Tackle it Tuesday--Christmas edition!!

Tackle It Tuesday Meme

I hope everyone had a wonderful Christmas. Our day was pretty relaxing. We had all our presents wrapped, so it was actually a pretty relaxing Christmas Eve, too!! We don't put any gifts under our tree until Christmas Eve once the boys are in bed, so we tucked them in and off we went. We moved the Christmas tree (don't worry--it wasn't hard...we stuck to a 4 foot tree this year to keep Lucas out of it:-)!!!) to the playroom and piled the gifts around it. Logan usually wakes up and heads straight to the playroom, so we made sure we were up before him to keep him from seeing his surprise until the cameras were ready...LOL!! Okay----I'm ready......

We truly enjoyed watching the boys open their gifts!! The boys played and played and Logan insisted he didn't need to eat today....he "isn't even hungry, anyway"!! It was a great day!!

What is your cleaning schedule like??

Tackle It Tuesday Meme

Sorry...no pictures this week. The thing that I have to tackle today is 7 loads of laundry. I keep saying that I will do luandry on Tuesday and Friday, as to not let it pile up. Yet, I find I am still only doing it once a week. Before moving into here (in March), we lived in a one level apartment. I had a routine down and it worked great. I am struggling with that here and want to hear what your routine for cleaning is. At the apartment, my home was always in great shape. The problem here is that we are in a 3 level townhome. The playroom, storage room (which is ALWAYS a mess), and laundry room are in the basement. The main level holds the living room, dining room, kitchen, and 1/2 bath. Upstairs are 3 bedrooms and a full bath. I feel like when I am letting the boys play in the basemment, I can't be on another level cleaning. I also feel my old routine doesn't work here because I would clean certain rooms on certain days, but I hate that if I do that here, it means I am cleaning both bathrooms on seperate levels and the rest of that level isn't clean yet. I would also vacuum those rooms on the day they were scheduled to be clean. I have wood floors here and I feel that if I don't clean all of the levels on the same day, we just track everything around. I am sure we did on the carpet, it just didn't feel like it. Cleaning 3 levels of floors takes a while and it is next to impossible to do with a 1.5 year old tagging along. I use my kirby to clean the floors, so I can't really do it during nap time either.

Okay...so on to the old schedule....
Monday--kitchen
Tuesday--living room/dining room
Wednesday--bathrooms
Thursday--bedrooms

My house stayed really clean with this schedule. If I didn't get to a day, I had Friday to catch up before the weekend. There are also things that I did everyday...pick up toys before nap time and bed time, do dishes, sweep or wipe down bathrooms if needed.

So....let me hear it...how do you go about cleaning your house?? Do you do certain areas on certain days? Do you do everything in one day? If you have levels in your home, do you do a whole level on one day? How about floors? Do you clean them all in one day? For some reason this house is just throwing me. I do have more rooms (the rooms in the basement) and about 400 more sq. feet to clean.

The pantry....

Tackle It Tuesday Meme

This past weekend we continued with our projects that we started last weekend. We got our curtains hung, I got all the laundry done (not even one thing in the dirty clothes baskets...well, at least there wasn't at the end of the day on Sunday!!), cleaned the floors on all 3 levels, cleaned the bathroom and I did a general pick up of the entire house.

Before curtains...

After curtains...

One thing that needed to be done was organizing the pantry. We just moved into this house in March, so it isn't like it has had lots of time to get messy, yet somehow it was. As you can see from the before picture, I had already incorporated baskets to help me organize things. That helped a lot, but a big problem was that I never really finished organizing in there. There were still things that I hadn't found a home for, so I would just stick them in the pantry. The pantry was already pretty full and we had gone shopping at Costco and a regular grocery store so we had things sitting on the counter to put away. I didn't want it to all go in a messy pantry, so leaving it sitting out reminded me to clean my pantry. It worked!! It still isn't 100%, but it is WAY better!!

Here is a picture of it after I finished organizing it when we first moved in....

Here it is after a few months of use...

And here it is after I organized it...again...
